Loaded Campfire Fries

Earlier this month we went camping for a week. Every time we go camping, we try to cook something new or unique. A couple years ago we had some success with campfire quesoritos (a burrito quesadilla hybrid cooked on the grill) and a few years ago we tried out campfire eclairs . This year's wildcard was loaded french fries cooked with onions, cheese, and bacon and cooked over a campfire. You'll need: a tin foil pan  (I got a pack of 3 at the local grocery store for 99 cents--just make sure it doesn't have a nonstick coating or any plastic bits since it will be over flames) vegetable oil (or canola or peanut oil--anything that can handle the high heat) frozen fries bacon bits  chopped onions  your favorite shredded cheese (I used cheddar) long handled tongs and turner/spatula a pointed knife or skewer optional: fire gloves  (these are really helpful when cooking over a fire) I didn't include exact quantities because I didn't measur...

Camping Quesorittos

It's been a busy month so far, so I have to take a break from crafting this week and share a recipe that we tried out from our camping trip a couple of week's ago. Each time we go camping I try to plan for one wild card recipe--something new to try. Sometimes I make up my own recipes and sometimes I just adjust one I find online. This year I saw somewhere the idea to make quesadillas in a pie iron , but I was worried about how crispy they'd end up being, so I figured a foil packet quesadilla would work better. I mixed my quesadilla toppings in a bowl: precooked chicken (Tyson and Oscar Mayer both make good fridge packets that work great for camping), onion, shredded mexican cheese blend, and real bacon bits . Of courses you could put whatever you like on your quesadillas in the mix. One container of Oscar Mayer chicken and less than one 8oz bag of shredded cheese made 4 quesorittos. Campfire Eclairs

I keep seeing photos and posts online about what are essentially the same campfire dessert: campfire tarts, dough boys, woof'ems, campfire eclairs, etc... They are all made by roasting biscuit or crescent roll dough (I've also seen it done with bisquick) on a stick of some kind over the fire. Then you slide it off of the stick and fill it with whatever your heart desires. I had wanted to try them out for a while. I was going to make the sticks that were explained on this website . But I couldn't find the charger for my drill, so when we went camping, I just threw the dowel rod in the car and off we went. Before I stretched my biscuit over the end of the stick, I soaked it in some vegetable oil and and made sure to wipe it down with the oil before each new biscuit. The first biscuit I tried, was doughy in the center--too doughy to eat, so I scrapped it and tried again.
